There is nothing like a crispy salad on hot summer days, and these 2 salads that I like share ONE easy dressing.
Sweet mustard dressing:
Serves: 3 (I always prepare a dressing for more than a person, put it in a bottle and keep it in the fridge)
Calories per serve: 40
½ teaspoon Dijon mustard
½ teaspoon honey
3 teaspoons lemon juice
Freshly grounded black pepper
Freshly grouded 6 whole raw walnuts
Put all the ingredients in a small jar then shake vigorously.
First salad:
Lentil and vegetable salad:
Serves: 1
1 handful baby rocket leaves
1 roasted beetroot
½ bunch asparagus, trimmed
2 tablespoons cooked lentils
3 teaspoons of low-fat ricotta cheese
3 walnuts
Cool beetroot. Cut beetroot into wedges and mix all the ingredients together. Toss with the dressing and serve.
Cheese can be also put on the top for better decoration. Delicious!
You can add lean roast beef slices
Second salad:
Smoked salmon, feta and bean salad: This one is really yummy!
Serves: 1
1 handful baby spinach leaves
2 tablespoons cooked broad beans
1 tablespoon cooked green peas
2 slices smoked salmon (you can replace it by crab slices as well)
2 slice low-fat feta cheese
Combine all ingredients together in a bowl, then toss with the dressing and serve.
